Three Good Things in Winter

Here are three ways we bring pleasure into our lives over the gloomy winter with honey and beeswax candles:
1. BORAGE over blue
This subtle honey goes wonderfully with the bold charactered piquant blue cheeses such as Gorgonzola or Roquefort. Drizzle over a section of cheese and scatter with chopped pecans or walnuts before serving with cheese biscuits and good quality oat cakes.
2. Light a CANDLE to fight SAD

SAD, or Seasonal Affective Disorder is a type of depression which affects many people in the winter as the hours of sunlight get shorter. I certainly feel the effects of the short days, if you think you might have SAD it's important to get outside for a walk in the sun when you can, get enough Omega 3 & vitamin D and you can use a sunlight lamp. But I also find the simple light and warmth of a candle flame in the house cheers me up and helps me through the gloom.
3. Dress winter puds with chunks of HONEYCOMB

Line the inside of a cup or ramekin with pear slices (they look especially good with the stems sticking out). Fill the ramekins 3/4 full with a basic sponge recipe, sprinkle nuts over the batter and bake until the skewer comes out clean. Let it cool slightly and remove from the cups (carefully). Drizzle with honey and serve with fresh cream and a chunk of honeycomb. Inspired by Easy Cooking from Nina's Kitchen.
